Preheat your oven to 180’C s and generously rub an 8×8 inch pan with coconut oil. Set aside.
In a large bowl, whisk honey, coconut oil and salt until creamy. Add the coconut flour to make a dough.
Press the dough evenly into the prepared pan and bake for 1 minutes. Let it cool completely to the room temperature.
Change the oven to 165’C.
Take a large bowl and use a hand whisk to whisk the eggs, honey and lemon zest in a large bowl. Don’t use the hand mixer for this as it may overbeat the eggs.
In a small bowl, take lemon juice add coconut flour 1/2 tsp at a time until well mixed.
Now pour the lemon juice mixture into the egg mixture while whisking continuously until well combined.
Pour the topping over top of the cooled crust and bake for about 20 minutes or until the topping is just set. A good way to check if its done is to give the pan a little shake. Ideally the centre should be slightly jiggly.
Let cool completely at room temperature. Then refrigerate for overnight or at least 6 hours before cutting.
Use a sharp knife to cute them in squares or desired shapes.
These will be good for a week in the fridge in an airtight container.

Preheat oven to 200°C and grease an 8-inch round cake pan with butter or line with parchment paper.
In a large bowl, whisk softened butter, eggs and vanilla. The butter will not incorporate fully and that’s fine. Add vinegar and whisk again.
Now add, almond flour, coconut flour, erythritol, flaxseed powder, baking powder, xanthan gum, and salt.
This mix will form a sticky dough. Freeze it for 15 minutes or until you find it easy to roll.
Meanwhile, mix all the ingredients for cinnamon filling and keep aside .
Now take 2 sheets of parchment paper, place the dough in between and roll it into a rectangle of desired thinness.
Spread the cinnamon filling onto the dough, leaving a 1-inch margin at the top empty.
With the help of parchment paper, roll the dough towards the empty inch making a tight log. Seal the edge.
Cut the log crosswise into 12 equal pieces and transfer rolls to the prepared round cake pan.
Bake for 5 minutes at 200’C, then reduce temperature to 175’C and continue baking for another 15-20 minutes until golden brown. If necessary, cover loosely with foil to prevent burning. These can be stored in an air tight container in the fridge up to a week.

Cream Cheese Frosting
1/2 cup cream cheese, room temperature
2 tbsp butter, room temperature
2 tbsp powdered erythritol
2 tbsp heavy whipping cream
10 drops liquid stevia
1 tsp vanilla extract
Instructions: In a large bowl, whisk together cream cheese, butter and erythritol until light and fluffy. Add vanilla and stevia and add cream 1 tablespoon at a time until you achieve a thick, spreadable consistency.
